Shangri-La had introduced 2019 with a bang when they brought back Michelin Star Chef Marco Stabile. For his sophomoric appearance in Chiang Mai, Chef Stabile tried his hand a fusion mix of Italian dishes with influences of Asia. Chef Marco was stated that it would “be a very gastronomic surprise in the simplicity…” but it was every single bit of world-class gastronomy. For February Shangri-La has lined up an extraordinary guest appearance for their kitchen, Chef Gaetano Trovato. Owner of the famed Arnolfo Restaurant where Chef Marco Stabile spent some time under the tutelage of Chef Trovato.
Chef Gaetano Trovato
Chef Trovato has had a deep relationship with food from an early period. He began working in kitchens when he was only14, gathering more experience and knowledge while working for some of the finest Swiss and French hotels and restaurants.
Arnolfo Restaurant made its debut in 1982, and at age 25, Chef Trovato earned his first Michelin star. During his tenure, Gaetano and Arnolfo Restaurant have collected various awards, including three Luigi Veronelli stars, Gambero Rosso Emerging Chef, Outstanding Chef from the L’Espresso Guide, two Michelin stars, and three forks in the Gambero Rosso guide.
Chef Gaetano Trovato cuisine centers on regional ingredients of Siena and Tuscany with attention to Italian and European products and with an emphasis on seasonal flavors. Arnolfo is in a renovated 16th Century palazzo. It reflects a harmonious mix of antique furniture and handcrafted chandeliers with a few pieces of modern art.

The highlight of this event is going to be Suckling pig Ravioli, leek, and liquorice which using pig from a local farm, leek and other organic vegetables from Royal project. Mille feuille, strawberry, and basil that chef will use local strawberry which is in season in Chiang Mai now.
