Boat Noodles is a Central Thailand style noodles. Vendors would paddle up to a location wherever people would meet up. They would cook right there in the boat and serve them inside the boat. So this why people refer to them as “Boat Noodles”. Now of course in Chiang Mai, you won’t find boats serving up noodles but you will find restaurants serving Boat Noodles, Witha boat inside the shop paying homage to the origins. As for the soup, it is made with blood in it, it can be either pork or beef or maybe both but this is a staple of the broth.
