Culinary Festival 2019 with Chef Paolo Pelosi

Shangri-La Chiang Mai started 2019 with a bang when they announced they were going to do an Italian Culinary Festival by bringing some of Italy’s top chefs. To start this festival, they brought back Michelin Star Chef Marco Stabile for a sophomoric appearance in Chiang Mai. In February Shangri-La lined up an extraordinary guest appearance for their kitchen, Two Michelin star Chef Gaetano Trovato owner of the famed Arnolfo Restaurant in Italy. Both of these chefs were received with excitement amongst the gastronomy enthusiasts in Chiang Mai. The task of bringing the Italian Culinary Festival to a close falls on the shoulders of Shangri-La Chiang Mai executive chef, Paolo Pelosi.

Chef’s father worked in a pastry shop in his home-town where he would prepare cakes on the weekend for the family. Chef, states that he was the person who instilled the passion for cooking. Pelosi would eventually make the decision to attend a culinary school in Florence, and on the weekend he would work at a local restaurant.

Paolo’s style reflects modern contemporary Italian cuisine. He emphasizes on using ingredients that locally sourced and readily available depending on the season. That’s the way he likes to cook using with seasonal items and combine the different flavor and textures.

Experience first-hand the freshness of unique spring produce directly imported from Italy. Chef Paolo invites you to come and discover an Italian spring right here in Chiang Mai. As the menu he has prepared for this event will reflect what the spring season in Italy would offer. Produce imported from include black truffle, artichokes, white asparagus, black truffle, green peas, broad beans, sea crabs, wild seabass, and fresh scallops. All which will be skillfully cooked by Executive Chef Paolo Pelosi, and will be presented through 4 and six-course menus.
